Maple Brown Sugar Valentines Cookies Recipe Makes: 12 - 14 large cookies / 24 small cookies Ingredients 2 tablespoons soft brown sugar - for sprinkling 2 tablespoons white sugar - for sprinkling 1 cup / 225 grams butter softened 1/2 cup soft brown sugar firmly packed 1 egg room temperature 1/4 cup maple syrup 2 3/4 cups all-purpose flour 1/4 teaspoon baking soda Pinch of salt Maple Icing Decoration 1 cup icing sugar 3 - 4 tablespoons maple syrup Edible dried rose petals Directions Preheat oven to 180 C / 355 F fanbake. Line 2 x large baking trays with parchment paper. In a small bowl mix together brown sugar and white sugar. Set aside. In a large bowl cream together butter and sugar until pale, 1 minute. Stir egg and maple syrup into your butter sugar mixture. Add flour, baking soda, and salt. Stirring until combined. Split your cookie dough into 2 x even portions. Roll 1 of your cookie dough portions between two large pieces of baking paper until 0.5cm or ¼-inch thick. Leave between baking paper sheets. Repeat for your second cookie dough portion. Place your cookie dough sheets into a freezer for 5 minutes or 10 - 15 minutes in the refrigerator. Remove cookie dough from the freezer. Use a large heart shaped cookie cutter to create your Valentines cookies. Transfer to baking trays. Tip: If you are struggling to separate your cookies from the scraps or the cookie is too fragile, just quickly place cut cookies back into the freezer for 2 - 5 minutes. Once cookies are on your baking trays, sprinkle with sugar mixture, lightly rubbing the sugar evenly across the top. Place cookies in the oven for 10 - 12 minutes. Remove from the oven once golden and cooked. Cool on trays for 5 minutes before transferring to cooling racks. Assembly Once your cookies have cooled you can decorate them. In a medium bowl add icing sugar and 2 tablespoons maple syrup. Stir. Continue adding maple syrup until runny. Using a spoon, slowly drizzle maple icing over cookies creating a striped pattern. Sprinkle dried rose petals while the icing is still wet. Carefully place down and wait for the icing to set. Repeat for the remaining cookies.
