With its suggestion of rye, caramel and roasted sugar, it is perfect for your recipes; use it in simmered dishes, pastries or to spice up your salad dressings. In Canada, maple syrup is available in five different categories. The main grading criterion is the color, expressed in terms of degree of light transmission. The later the harvest, the darker the syrup; it also becomes less complex, and has a more pronounced caramel flavor.

I have used this item several times before the flavour is the best out there, so rich and delicious. I have used it in pastry recipes, rice pudding and in my fruit salads or pancakes or even jams. I use it in anything needing sugar substitute!
Yeah, me too. But, the add for this caught my attention. I received a gift from an insurance company I work with. It was a Maple Syrup from Quebec. It was great. So, when I saw this add and they were in Quebec, I decided to let my guard down and order their Late Harvest. Boy, am I glad I did. Sweet, full flavored and thick. French toast, oh yeah! Vanilla ice cream, more please. Now I need some walnut ice cream so that I can have maple walnut ice cream. Don't hesitate........
I’ve been using this product, late harvest, for quite some time. I keep coming back for more because for me, there is no other! I use it every day on my rolled oats breakfast and also for cooking.
