Chocolate Cookie Sandwich with Maple Butter Cream

Ingredients:

For the cookies:

  • 200g dark chocolate (70% cocoa), chopped
  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Chocolate cookie sandwich with Maple Butter Cream

 

For maple buttercream :

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 2 cups powdered sugar
  • 1 Tbsp milk
  • 2 Tbsp pure maple syrup (Late Harvest ou Very Dark)

* Alternatively, you can use Escuminac maple spread. *

Instructions for the cookies :

  1. Preheat the oven to 180°C. In a saucepan, melt the dark chocolate and butter over low heat. Allow it to cool.

  2. In a large bowl, beat eggs, sugar, and vanilla extract until the mixture is light and fluffy. Add the melted chocolate mixture and mix well.

  3. In another bowl, combine flour, cocoa powder, salt, and baking powder. Add this dry mixture to the chocolate mixture and mix until a homogeneous batter is formed.

  4. On a baking sheet lined with parchment paper, drop spoonfuls of batter, spacing them well apart. Bake for 10 to 12 minutes.

  5. Allow them to cool completely on a wire rack.

 

Instruction for the buttercream :

  1. Put all the ingredients together and blend with a mixer.

Instruction for the sandwich

  1. Once cooled, assemble the cookies by filling them with maple butter cream. Create sandwiches by gently pressing two cookies together.
